This salad is one that my family regularly enjoys with our dinners. It is simple, but very satisfying.
To build this salad:
2 diced tomatoes
1 handful of flat-leaf Italian parsley
2 chopped avocados
2 Persian cucumbers (if this is variety is not available, feel free to use whatever kind of cucumber you like)
1 or 2 green onions
fresh juice from half a lemon
drizzle olive oil
salt and pepper to taste
green olives as garnish, or any garnish you choose.
Sometimes we add a little bit of canned tuna, but that is optional.
Enjoy!
